High Tea on CBC

This morning on CBC's Weekend Morning Show with host Nadia Kidwai I presented High Tea.  I made Moroccan fresh mint green tea slightly sweet, crust less sandwiches using Old Church Bakery's Feta Dill Sourdough, Gimli Fish's Smoked Goldeye with cream cheese, some smoked salmon and cucumber with dill, and Strawberry Shortcake. These make lovely and easy to prepare dishes for Mothers Day next week.






Smoked Goldeye with Cream Cheese 

1 medium smoked Goldeye (available at Gimli Fish), skinned and pulled off of the bones
1/2 - 1 cup softened cream cheese
1-2 green onions, sliced, or chives
salt and pepper, to taste
optional:  chilies

Mix all ingredients together to make smooth consistency.  Spread generously on crustless bread for high tea.  I used Old Church Bakery's Feta Dill Sourdough, available today at Third and Bird and St. Norbert's Farmer's Market.

Also featured above, smoked salmon with cucumber and dill.

Strawberry Shortcake

 2 cups flour
5 tbs sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 1/2 cups buttermilk

Preheat oven to 400�F.

Strawberries and other berries macerated in a bit of sugar for at least 30 minutes.  Whipped cream with a bit of sugar and vanilla.

Mix dry ingredients above and add the buttermilk until just mixed.  Pour into an ungreased 8" pan and bake for 18 minutes, until golden.  Remove from pan onto a cooling rack after cooling the pan for a few minutes.  Cut into serving pieces and split in half. 

Spoon berries and whipped cream over the shortcake and enjoy!

Phyllo Wrapped Steelhead Trout with Saskatoon Savory Sauce on CBC's Weekend Morning Show. Something that any kid could make...

This morning I presented this dish for CBC's Weekend Morning Show, with guest host, Laurie Hoogstraten.  It really is very simple to prepare with impressive results. 


Phyllo Wrapped Steelhead Trout with savory Saskatoon sauce

1 fillet Steelhead Trout (naturally raised in Warren Manitoba, available at Gimli Fish, from Watersong Farms http://www.watersongfarms.com/)
2 cups sliced mushrooms (white button, crimini, shitake, chanterelles, etc.)
Optional:  1/4 cup ch�vre in mushroom mixture
3 tbs butter (1 for saut�ing mushrooms, and 2ish melted for buttering phyllo pastry
1 tbs olive oil
� tsp freshly grated nutmeg
2 shallots, minced
Dijon mustard, to lightly cover the fillet
3-4 sheets Phyllo

Cut filet into serving sized pieces and set aside in the refrigerator. Thaw phyllo and prepare mushrooms as follows:

On medium-high heat, saut� shallots until translucent and add the mushrooms. Saut� until mushrooms are soft. Deglaze with white wine or Mirin (optional). Set aside and let cool.

Preheat oven to 350�F. For the phyllo dish: Lightly coat the fish piece with Dijon Mustard and place on phyllo sheet, cut to fold and cover only. Top with saut�ed mushrooms. Fold pastry over fish and mushrooms and brush with melted butter. Bake for 12 -15 minutes, until brown and depending on the thickness of the fish.

Saskatoon Sauce

1 cup Saskatoons (frozen, wild, available from Gimli Fish)
1 tbs butter
1 tbs olive oil
� tsp dried thyme
1 tbs Dijon Mustard
salt and pepper, to taste
� cup red wine or port

Heat pat to medium high heat and add butter and olive oil. Add Saskatoons and cook until soft. Add mustard, seasonings and red wine. Cook until shiny. Serve over Phyllo Wrapped Steelhead Trout.

Enjoy! 


Later that day...

And for the D.A.Niels Tajine Cooking demo....

Moroccan Beef Stew (can use lamb)
2 lb beef roast, cut into bite-sized pieces
2 onions, thinly sliced
2 tbs ras el hanout
1-2 tbs olive oil
1-2 tbs butter
good pinch saffron
2 large tomatoes, chopped
3 carrots, peeled and diced
2 green peppers, seeded and diced
1/2 - 1 cup prunes
2-3 tbs honey
1 cup chicken broth
1 cup red wine
salt, to taste

Slowly saut� onions on medium-low heat with olive oil until they begin to caramelize. Stir in Ras el Hanout spice blend. Turn up heat to medium-high and add butter and saffron. Brown meat well on all sides and add tomatoes and other vegetables. Add broth, prunes and honey. Add red wine and salt and let simmer for 1-2 hours, depending on using the tajine and toughness of the meat. Meat should melt in your mouth when done.

Serve with flat breads, rice, couscous or bulgur.

Marak (Tajine) of Red Cabbage with Tomatoes and Olives
� cup olive oil 

1 medium head red cabbage (can use cauliflower), cored and small slice
2 tsp sugar
2 ripe or canned tomatoes, chopped (I�m using 2 tbs good tomato paste with tomatoes)
2 tsp hot smoked paprika
2 tsp toasted ground cumin
4 garlic cloves, grated into paste
1 tsp sea salt
2 tbs chopped flat leaf parsley
Juice of � lemon, to taste
 � preserved lemon (see chef for details)
12 green-ripe olives, pitted



1. Heat oil in tajine over low heat.  Add cabbage and sugar and cover with lid or with parchment paper and the lid and cook gently for 10 minutes.  Raise heat slightly and add a splash of water.
2. Add tomatoes and paprika and continue to cook, covered for a few minutes.
3. mix cumin and garlic and add with � cup water to tajine.  Cook gently for 20 + minutes.
4. Add the parsley and lemon juice.  Garnish with the slivered lemon and olives (or cook in with tajine).  Serve warm or at room temperature.

Steelhead trout on Brown Butter Greens on CBC's Weekend Morning Show

I'll be presenting the following recipes on CBC's Weekend Morning Show with host Terry MacLeod, tomorrow morning after the 8:30 news.

We have lovely Steelhead Trout, from Watersong Farms, in Warren Manitoba.  It is available fresh each Friday at Gimli Fish.  They produce gorgeous Steelhead trout that looks and tastes like buttery salmon.  

The Spinach, for today's recipe, came from Fertile Farm, Manitoba and their wonderful produce is available at the St. Norbert's Farmer's Market. 



Pecan Crusted Steelhead Trout on Brown Butter Greens

1 fillet Steelhead Trout
1/2 cup pecans, finely chopped
1 heaping tablespoon pesto or 2 tbs chopped fresh herbs and garlic
1 egg
salt and pepper
drizzle olive oil

Place fillet on a baking sheet that has been lined with parchment paper or aluminum foil, for easy clean up.  Mix topping ingredients together and spread over fillet.  Bake at 350�F for 10-15 minutes, depending on the thickness of the fillet.

Serve immediately over Brown Butter greens.  We enjoyed this with a baked sweet potato as well.

Brown Butter Greens

2 bunches Swiss Chard or Spinach, washed and cut chiffonade style
1-2 cloves garlic, sliced
1-2 chilies, finely chopped
1/4 tsp hot smoked paprika
1-2 tbs butter
pinch ground nutmeg
salt and pepper, to taste
1- 2 shallots, sliced

Heat large and deep pan to medium heat and brown the butter without burning. One trick, once the butter is brown, is to add a bit of olive oil.  Add the remaining ingredients and saut� until softened and cooked through. 

To plate, place greens on plate and the Pecan Crusted Steelhead Trout resting on top.  Serve with sweet potato, or your favourite side dish, such as quinoa, rice, etc.

Wild on hot days with Sockeye Salmon on CBC's Weekend Morning Show!

Yesterday, on CBC's Weekend Morning Show with guest host, Laurie Hoogstraten, I'll be bringing in these two dishes.  Gorgeous wild caught sushi grade Sockeye Salmon is fresh in bi-weekly at Gimli Fish.  Get it skin-on as both recipes use the skin to add a crispy element.

1. Wild Sockeye Salmon Sashimi on cold-dressed Soba or Udon noodles

For 4 people:  1 filet Wild Caught Sockeye Salmon, skin on.

1 bundle dried noodles per person*

Dressing: 
1-2 tbs Dijon mustard
1 tsp grainy mustard (optional)
1 inch ginger, grated
1 tbs vinegar
2-3 tbs Mirin
1 tsp good sesame oil
drizzle chili oil (optional)
� tsp sugar
1 tbs soy sauce

Other options:  chopped green onions or chives, avocado slices, shredded cucumber, etc.

1. Skin the Salmon filet and keep the skin.  It is very simple to skin the filet.  With a very sharp knife in one hand, grab a pinch of sea salt in the other, to use as a grip, hold the small end of the filet and slice the skin off pulling the skin toward you.

2. To crispy cook the skin, cover with sesame oil and cook at high heat on a skillet or on a hot grill.  Set aside.  Cut into smaller pieces when cooled and crisp on both sides.

3. Slice Wild Caught Sockeye Salmon into bite sized sashimi slices.  Keep chilled.

4. Cook the noodles for less than the package states.  For example, cook the Soba noodles for 4-5 minutes instead of the 6-7 minutes.  The Udon should cook for 7 minutes, not 10 � 12 minutes.

5. Drain the cooked noodles and run under cold water until the noodles are completely cooled.  Drain thoroughly.  If not using immediately, drizzle with sesame oil to prevent sticking.  Keep the noodles cooled.

6. Dressing can be made in advance.  Mix all dressing ingredients together in a bowl until will emulsified. 

7.  You can either prepare all ingredients into one large bowl or prepare individual bowl servings.  Dress the noodles and divide into bowls.  Top with slices of sashimi, avocado and crispy salmon skin. 

You can sprinkle sesame seeds on top, more green onions, soy, etc.  Have fun with the dish.

* Look for dried Soba or Udon noodles in the noodle section of an Asian market such as Oriental Market or Sun Wah, Lucky�s, etc.  Can use buckwheat or green tea Soba.


2. Blackened Wild Caught Sockeye Salmon (adapted from Alex Guarnashelli)

1 filet Wild Caught Sockeye Salmon, skin-on

1 tbs smoked paprika
1 tsp cayenne (to taste)
1 tbs fresh thyme leaves, chopped
1 tbs fresh oregano, chopped
1 tsp sea salt (or kosher)
3-4 tbs canola oil
2 lemons, zested and juiced

Mix spices and salt together in a small bowl.  Place mixture on a plate and coat the salmon portions, flesh side only. 

Heat cast iron skillet or grill to medium heat.  If using a grill, try a grill sheet such as Cookina and add a bit of oil to the sheet. 

Place salmon, flesh down, on the pan or grill sheet and cook for 2-3 minutes.  Turn and cook until the skin becomes crispy.  About 5 minutes.

Serve immediately with lemon zest and lemon juice.

Holiday cooking/baking on CBC's Weekend Morning Show

This morning on CBC's Weekend Morning Show with guest host Laurie Hoogstraten, I am making the following dishes, plus a few extras.


This afternoon, I'll be at D.A. Niels, demonstrating the Gastrolux pan and making Tuna Tatatki (seared tuna) and Pomegranate Chicken with ras el hanout.



Spanikoptia Triangles

1 pkg filo dough
2 pkgs frozen spinach
1 white onion chopped
3 cloves garlic minced
1/2 c mushroom sliced
1/4 tsp nutmeg
1/4 tsp paprika
3 1/2 tbs olive oil
1 1/2 c feta cheese crumbled
1 egg
pepper to taste
1/3 c butter
Thaw pastry in package. In advance, prepare filling. Saut� onion and garlic
until translucent. Add mushrooms and saut�. Add thawed spinach and
spices. Cook on medium-high heat until some of the water has cooked off.
Add grated feta. Mix in one beaten egg. Remove from heat and cool.
To prepare pastries: Heat oven to 350F. Dampen tea towel. Cut rolled
pastry into four equal parts and lay out on cutting board. Cover with
dampened towel. Melt butter and set aside with pastry brush. Fill pastries in
desired shapes (triangles, pockets, in muffin or cupcake tins, etc). Brush
pastries with melted butter before filo turns papery. Bake until golden, about
15 minutes.

Latkes (Potato Pancakes)


3 medium potatoes, peeled and shredded
1 onion, shredded
2 eggs
1/4 cup flour or maztah meal
salt and pepper
freshly grated nutmeg
1/4 tsp paprika (optional)

Pickerel cheeks and vermouth or your favourite clear liquor.
Butter
Olive Oil
S & P
Cr�me Fraiche
Golden Caviar

Mix potato pancake ingredients together and fry in pancake size in a little olive oil until golden brown on both sides. Remove from heat and using cookie cutters, cut bite sized pieces from the pancake.
Saut� pickerel cheeks and deglaze with vermouth.

 Seared Ahi Tuna with 3 kinds of Sesame Seeds.
 Grilled Pomegranate Ras El Hanout Chicken.

Sushi night at home. Practice makes perfect.

Last night Desmond and I prepared sushi rolls and sashimi at home.  Sushi Fridays.  I purchased some lovely tuna, salmon, scallops and golden caviar from Gimli Fish.  All sustainable.  Sushi rice is also available at Gimli Fish.

As the rice cooked, I prepared the fish.  Be brave.  Be generous in the slicing.  It takes practice.

The salmon roll had a simple omelette that had been saut�ed in Sesame oil.  I like to use Kadoya brand.  The scallop and tuna rolls had finely sliced snap peas.

Wild Caught Shrimp two ways on CBC's Weekend Morning Show

This morning I had the pleasure of presenting the following shrimp dishes for CBC's Weekend Morning Show with host Terry MacLeod.  The wild caught Argentinian shrimp is available at Gimli Fish and works perfectly for these two dishes. Turkish Baharat is available at Pollock's Hardware Co-op.   Hot smoked paprika is available at Millad's on Notre Dame in Winnipeg.

1. Spanish Smoked Paprika Shrimp

1 lb peeled, wild caught shrimp
1 tbs butter
Drizzle olive oil
1 clove garlic, minced
1/2 tsp hot smoked paprika
Pinch sea salt

Heat butter and oil in saut� pan. Add shrimp and toss well. Add garlic and then paprika. Serve with bread when shrimp is firm and pink.

2. Turkish Grilled Shrimp

1/2 lb shrimp, cleaned, tail off
1-2 tbs Turkish Baharat*
3-4 shallots, grated or one small onion grated
2 tbs lime juice
1/4 cup good olive oil
1/4 tsp paprika (can used smoked)
pinch salt and pepper

Combine Turkish Baharat, grated shallots, lime juice, olive oil, paprika and salt and pepper in a bowl. Place shrimp in the bowl and cover completely with the marinade. Place in fridge and let marinate for 6 hours. Grill 2-4 minutes a side on a very hot BBQ grill.

To enjoy in a Pide ,grill Naan or Pide** on BBQ and spread on a bit of yoghurt tahini sauce (recipe follows).

Yoghurt tahini sauce

1/2 cup good plain yoghurt
1 clove garlic, minced
3 heaping tbs tahini
2 tsp lemon or lime juice
pinch salt

Mix all ingredients together. The tahini will cause the sauce to thicken quickly. Use on grilled Pide or Naan or as a crudit� dip.

Scallops 2 ways for CBC's Weekend Morning Show!

Today on CBC's Weekend Morning Show with Host Terry MacLeod, Nova Scotia Scallops two ways!
These buttery Scallop pillows are available at Gimli Fish.  So easy to prepare and so delicious.  Perfect for the last kick at Summer!

 

Scallop Ceviche

1 lb Nova Scotia scallops, quartered
1 cup grape tomatoes, roughly chopped
2 green or red Serrano chiles, seeded and minced
� cup chopped fresh cilantro
1 cup finely diced red onion
1 cup fresh orange juice
1/3 cup fresh lemon juice
1/3 cup fresh lime juice
salt, to taste
3 tbs finely shredded unsweetened coconut flakes

Mix all of the ingredients in a glass bowl.  Cover and refrigerate for at least 2 hours and up to 16 hours.

Spoon the ceviche into small glasses and garnish with cilantro.


Seared Scallops

As an appetizer, 2-4 per person, as an entr�e, 4-6 per person

Dry scallops off on a paper towel to remove moisture.  On a plate, mix ground sumac, salt and pepper and dip each scallop on two sides into the spice blend. 

In a hot pan, melt 1-2 tbs butter.  Sear scallops for  1-2 minutes on each side.  Serve immediately.

Lapsang Souchon poached Steelhead Trout for CBC's Weekend Morning Show

This morning on CBC's Weekend Morning Show with Host Terry MacLeod, I presented the following elegant lunch items.  Lapsang Souchon Poached Steelhead Trout and Pancetta, peas and mint pasta.

Lapsang Souchon Poached Steelhead Trout

2 fillets Steelhead Trout (or Wild Sockeye Salmon)

1 l Lapsang Souchon Tea (Available in most Asian markets, tea shops such as Cornelia Bean), steeped and cooled
1/2 cup Mirin (sweet Japanese cooking wine)
1 tbs grated fresh ginger
1/2 tsp white pepper
good drizzle good sesame oil (I like Kadoya, found in Asian markets)
1/4 + soy sauce
1tbs sugar

Mix marinade/poaching liquid when tea is steeped and cooled.  Place fillets in marinade after scoring the skin to prevent curling the fillet in poaching.  Leave skin on to keep fish moist.  It can be removed after cooking.

Let marinate over night or for a few hours.

Pour poaching liquid into a pan large enough to hold the fillets.  Bring to boil and then simmer the fillets for 5-10 minutes, depending on the thickness of the fish.

Serve hot with reduced poaching liquid or chill for a luncheon.  Garnish with chives or chopped green onions. 
Pancetta, Peas and Mint Pasta
 (serves 3)
5-10 Strips Pancetta, cut into smaller strips
1 cup peas (frozen)
few sprigs fresh mint, chopped or shredded
chilies, to taste
1 clove garlic, minced
pinch nutmeg
few tablespoons cream
drizzle olive oil
cooked pasta (I used shells but farfalle is traditional)
grated parmesan


In a saut� pan, heat oil and add pancetta and garlic and cook over medium heat.  Add some spoons of pasta water to soften if too crisp.  Add peas and remaining ingredients.  Toss together with pasta and grate cheese over top.  Enjoy!

Grilled Arctic Char with Chermoula for CBC's Weekend Morning Show!

 Tomorrow I will be presenting the following on CBC's Weekend Morning Show with host Terry MacLeod.

This is such an easy to prepare and versatile dish that goes beautifully with our local Arctic Char from Gimli Fish. 

This is a classic Moroccan flavouring for fish but also goes well with vegetables.

Chermoula for Fish or vegetables

1 head garlic, peeled (or 3-5 large cloves)
� tsp cayenne
1 heaping tbs cumin
pinch saffron
� bunch parsley
1 whole bunch cilantro
juice of one lemon
2 tbs vinegar
1 generous tbs olive oil
salt, to taste

1-2 fillets Arctic Char

Blend all of the first ingredients in a food processor and place in glass bowl. Set some chermoula aside for extra at the table.   Mix in the fillets and let marinate for at least 30 minutes. Grill on BBQ sheet for 10+ minutes without flipping (depending on thickness of fillet).

Serve immediately.  

Can also use Chermoula with saut�ed carrots or marinate and grilled eggplant.

Grilled Sockeye Salmon two ways on CBC's Weekend Morning Show!


 Tomorrow I will be presenting the following grilled Salmon recipes for CBC's Weekend Morning Show with guest host, Laurie Hoogstraten.  The Sockeye Salmon is a wild caught fish from a sustainable source. They are expecting a huge run this year.  Fillets, steaks or whole can be purchased at Gimli Fish.

A classic preparation is quite simple with Lemon, Dill and butter but I thought that listeners may be interested in trying a few other ways.

For  increased enjoyment at the grill, try  a BBQ sheet available at D. A. Niels.  You can get grill marks, keep the moisture of the food and nothing falls through! Also try soaking a Cedar Plank and cooking the fish on the grill on the cedar.




 Marinating Sockeye Salmon Steak

 Marinating Honey Miso Sockeye Salmon Fillet

 Grilling on BBQ Sheet

1. Honey Miso Grilled Sockeye Salmon

1 inch fresh ginger, minced
3 tbs miso (Light coloured, available at Sun Wah or Oriental Market or other Asian markets)
1 green onion, finely chopped (or chives)
3 tbs honey
3 tbs Chinese cooking wine or Mirin
a drizzle of chili oil
A drizzle of sesame oil
1-2 fillets Sockeye Salmon

Combine first 6 ingredients until well blended. Smooth over fish and let marinade for at least one hour. Grill, skin-side down, up to 10 minutes, depending on the thickness of the fillet.   Serve immediately.


Enjoy!

2. Seared Salmon Steaks or fillets

2 steaks Salmon or one whole filet
1/2 teaspoon garlic paste
1/4 teaspoon ginger paste
1/4 teaspoon crushed pepper powder
1/2 teaspoon turmeric powder
1/4 teaspoon chilli powder
1/4 teaspoon salt
1 teaspoon white vinegar or lemon juice
1/2 teaspoon cumin seed make paste with water (always
make paste with a little water)

Put all the ingredients onto a plate in a little pile.
Sprinkle over the vinegar and mix to a paste with the fingers.
Pat the masala evenly over the sides of the fish and marinate for minimum 1/2 an hour and better still for 4-5 hours.

When ready to cook or grill,  Put 2 tablespoons oil in a pan on a high heat. Sprinkle the fish with a little(pinch) salt more on both the sides of fish , reduce the heat and add the fish. Dip fish in oil on one side, turn over onto the other side and back again so it doesn�t stick to the pan. Increase the heat medium flame and cook for 5 minutes on one side, then 5 minutes on the other.

Seafood Extravaganza with CBC's Weekend Morning Show!

This morning I had the distinct pleasure of presenting the following recipes for CBC's Weekend Morning Show with host Terry MacLeod.  These dishes are all easy to prepare with amazing results.  The freshest seafood from Gimli Fish.  My hands smell like the sea.




1. Mussels with Pernod and cream

2 lbs mussels, scrubbed and debearded
1 cup chopped chives
1 � cups dry white wine
� green pepper, finely chopped
� cup whipping cream
3 tbs Pernod (or Ouzo or Raki)
3 tbs chopped fresh parsley

Combine chives, white wine and pepper in a large pot.  Add Mussels.  Bring to a boil over high heat.  Cover pot and cook until mussels open, about 5 minutes.  Remove mussels to a bowl, discarding any unopened mussels.  Add whipping cream and Pernod to pot and bring to a boil and reduce slightly for about 4 minutes.  Mix in chopped parsley.  Return mussels and juices to pot and bring to heat.  Season with salt and pepper.  Serve with broth, breads for dipping or Frites.


2.  Drunken Scallops

Scallops (2-4/person, depending on scallop size and if entr�e or appetizer)
1 cup mixed tropical fruit (frozen, mango, papaya, pineapple, etc.)
� cup vodka
2 oz Disorenno
2 oz Mirin
� onion
2 tsp Turkish Baharat
drizzle olive oil

Blend  all ingredients together, except the scallops.  Season with salt and pepper.  Marinade the scallops  in the fridge for 30 minutes to a few hours.  Sear or grill on high heat on each side and serve immediately.

3. Lobster Tails

1-2 tails per person, cut open for ease of service
Season, grill until bright red and meat is not opaque and let rest with a prepared butter.

Prepared butter
1 cup butter
favourite flavouring, i.e, saffron, roasted red pepper, kiwi, fresh herbs,  spices, garlic, etc.
In a food processor, combine butter with choice of flavouring.  Place in plastic wrap in a roll and chill.  Use on steaks, lobster, etc. as the meat rests.

Pea Shoot Pesto on Manitoba Arctic Char with CBC

It was my pleasure to present the following recipes yesterday on CBC's Weekend Morning Show with host Terry MacLeod.

Pea Shoot Pesto
Ingredients:
1/4 lb fresh, young pea shoots (or pea tips!)*
1 bunch chives, chopped (or spring onion)
2-3 cloves garlic, minced
1/3 cup Parmesan cheese
1/3 cup olive oil
1/4 cup toasted Almonds
salt
pepper

Directions:
Place the pea shoots, chives, garlic, cheese, olive oil, pine nuts salt and pepper in a food processor or blender, pulse until a thick paste forms.

Enjoy with pasta, fish or other pesto uses.



On Arctic Char

Spoon over Arctic Char fillet and bake at 350�F for 10 - 15 minutes, depending on the thickness of the fillet.

Pickerel with Pernod - an adaptation of an excellent Turkish Fish recipe

I made this for dinner for Desmond last night.  Not able to get Raki here in Winnipeg any longer, I used Pernod as it isn't as sweet as Ouzo or Sambuca yet has the flavours needed.   Quite delicious.   I'll remember to take a photo next time.

Why am I posting this now?  Gorgeous pickerel is in season until March 31st.  The sweetness of the fish makes it so versatile for so many cooking methods and recipes.

Pickerel with Raki (Pernod)  
4 filets pickerel
2 tomatoes, grated
2 cups mushrooms, sliced
1/2 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, finely chopped
1 tbs Turkish Baharat *
1/2 cup (less) olive oil
2 bay leaves
3/4 cup fish stock
salt and white pepper, to taste
juice of 1/2 lemon
1 bunch dill
2 tsp raki (Ouzo)

Heat skillet and saut� the garlic and add the onion and saut� for 3-4 minutes. Add bay leaves and Turkish Baharat. Add the vegetables, pour over the stock and simmer for 2 minutes. 

Season the fish with salt and pepper and place on top of the vegetables. Simmer for about 4 minutes. Chop the dill. Add lemon juice, chopped dill and raki and simmer for about 2 minutes. Arrange the fish and vegetables on a serving dish and serve immediately.

Spring will be Sprung. Pickerel and Spring on CBC's Weekend Morning Show

 Tomorrow morning after the 8:30AM news, I will be presenting the following dishes on CBC's Weekend Morning Show with host Terry Macleod.

I chose these recipes for a few key reasons.  First, the Winter Pickerel season ends on March 31st so get them now!  These sweet, pink fillets are delicious and very versatile.  Second, these recipes are very simple to make at home and since the ingredients are so close to home, even easier.   Third, whether observing Lent or celebrating Spring and the Vernal Equinox, these recipes fit.

Parchment Paper Fish
Per Fillet:
1 fillet Pickerel � now on sale at Gimli Fish
1/2 carrot, peeled and then peeled into strips
1-2 spears asparagus, in ribbons or sliced on a bias
pinch sea salt
pepper to taste
3-5 basil leaves, chiffonade (or pesto)
parchment paper
spray olive oil*

Preheat oven to 400�F. Place fish on top of very lightly oiled parchment paper. Place basil, carrot, asparagus and pinch of salt and pepper on top of fish. Lightly spray with olive oil. Seal paper and place in oven or on top of grill for up to 20 minutes in the oven, depending on thickness of fillet. If using a BBQ, place fish on upper level and not directly over the heat. The fish is so delicate. Paper will puff up. Remove and serve immediately.

Pickerel Fillet Fish Tacos
Serves 2

2 pickerel fillets
juice of 1-2 limes
1/4 - 1/2 cup finely chopped cilantro
pinch sea salt
1 chopped jalepeno (I used dried chipotle chilies)

Marinade the fish in the juice and spices for at least 20 minutes.

1 thinly sliced red onion (I caramelized it)
sour cream
1-2 thinly sliced green onion (cut on the bias for thinner slices and nicer presentation)
Sour cream or crema
Warmed corn tortillas (toasted for a few minutes)

Prepare all of the dishes for the taco and then saut� the fish in a bit of olive or canola oil, 1 -2 minutes per side. Remove fish from heat and flake. Assemble tacos and enjoy!

Arctic Char with Sorrel Pesto and Pumpkin Leaf Thoren on CBC's Weekend Morning Show

This morning I will be presenting the following on CBC's Weekend Morning Show with guest host Laurie Hoogstraten.  Gorgeous Arctic Char is available year round at Gimli Fish.  It is consistently a beautiful product.

The Bean or Pumpkin Leaf Thoren is a Kerala, South India recipe.  I used a mix of tender zucchini leaves and stems, squash and pumpkin leaves as well.  I'm thinking of trying these leaves in a Tajine dish substituting for Swiss Chard, although, that is healthy in the garden now as well. 



Arctic Char with Sorrel Pesto

Pesto
2 handfuls fresh sorrel (gorgeous perennial available to plan from Sage Garden Herbs)
1 handful basil
1/2 cup walnuts or pecans, chopped
1 garlic clove
juice of one lemon (optional, I left it out as the sorrel is very lemony)
1/4 cup good olive oil
black pepper

Arctic Char
2 tbs olive oil
1 fillet of Arctic Char (available fresh and local from Gimli Fish)
pinch sea salt
good pinch black pepper

1. Pur�e the pesto ingredients in a food processor or with a mortar and pestle. 
2. Heat olive oil in large pan over medium-high heat.  Season the fish and add it, skin side down for a few minutes (maximum 5).  Turn fish and cook for a few minutes more, depending on thickness of fish.  Remove fish from heat, plate and spoon pesto over. 

OR  Spoon a generous amount of the sorrel pesto over the uncooked Arctic Char and grill, on one side of a very hot BBQ until done or bake at 400� for 10-15 minutes, depending on the thickness of the fish.

Enjoy!

OR  Mix Sorrel Pesto with sour cream and spoon over cooked Arctic Char when plating.

Bean Leaf or Pumpkin Leaf Thoren

3 cups finely shredded bean or pumpkin leaves (use the youngest leaves and stems)
1 dried chili
1 pinch cumin seeds
2 shallots (or half of red onion)
1 cup grated coconut (unsweetened  A good one is available at Dino's Grocery Mart)
1 tbs oil (olive or canola, I often add a drizzle of good coconut oil on later for flavour and health)
2 tsp rice
2 tbs chopped onion
1 dry chili, broken
salt, to taste

1. Grind the chilli, cumin seeds and shallots together, coarsely.  Crush in the grated coconut.  Mix all together.
2. Fry mustard and rice in hot oil.  Add onion and chili pieces and saut�.  Add the ground ingredients and fry a little while.  Then add the greens and cook, with a little water and the salt until the water is all evaporated.  Medium heat.

There are health benefits associated with bean and pumpkin leaves for anti-inflammatory benefits as well as benefiting people living with diabetes as it helps to regulate the blood sugars.  Squash and beans would have been grown, as part of the three sisters or three aunties for excellent permaculture for soil nutrition as well as for the benefits of eating.

CBC's Weekend Morning Show - Arctic Char 2 ways and mushrooms!


 This morning I had the pleasure of presenting the following recipes on CBC's Weekend Morning Show with guest host, Joff Schmidt.  The gorgeous Arctic Char is available at Gimli Fish.  Perfect for grilling, baking or broiling.  It is sourced so close to Winnipeg, it is very, very local.  If you had the Pea Shoot Pesto Arctic Char at Arkadash Bistro and Lounge, this is the fish.

Honey Miso Grilled Arctic Char

1 inch fresh ginger, minced
3 tbs miso
1 green onion, finely chopped
3 tbs honey
3 tbs Mirin
a drizzle of chili oil
1 fillet Arctic Char

Combine first 6 ingredients until well blended. Smooth over fish and let marinade for at least one hour. Grill, broil or saut�  until begins to flake, about 4-8 minutes, depending on the thickness of the fish. Serve immediately.

Arctic Char Crudo
1. Cure the fish overnight in the following:

1 fillet Arctic Char
� cup sugar
2-3 tbs sea salt
pepper, and assorted herbs (today I used saffron, thyme and Fennel pollen)

2. Rinse fish in cold water and slice thinly with the following vinaigrette. 

Orange Vinaigrette
Juice of half an orange
2 tbs vinegar
pinch sugar
salt and pepper to taste
Olive oil
Optional herbs (saffron, thyme, oregano, etc.)
Optional garlic

Whisk vinaigrette and serve over thin slices of cured Arctic Char.  Serve with crumbled hard boiled egg, thinly sliced chives or green onions and or arugula.

Korean Mushrooms in Foil

This is actually a very traditional recipe.  So simple to do on the BBQ as a side dish.  

Mushrooms
Foil
Sesame oil (optional)
sea salt
white pepper (optional)

Wrap the mushrooms and seasoning in the foil.  Place over coals or the grill for several minutes, turning every so often until done.  Serve with Korean dipping sauces such as Kochujiang.
