Peach, Nectarine, and Plum Pie

This is my favorite pie, and basically the only fruit pie I make. A crispy, flaky, super rich all butter crust with a sunset of colorful peaches, nectarines, and plums inside. A few summers ago, I made it for my parents, and my dad said it was the best pie he�d ever eaten. That�s a pretty big compliment, because the man loved desserts. I got his sweet tooth, and my mom�s taco tooth.

We were never really a summer pie family. We had fresh strawberry pie in the spring, and pumpkin, pecan, and huckleberry at Thanksgiving. And my dad usually made an apple pie, with meticulously thin sliced apples, once every fall or winter. But our summers were 100 degrees without AC, not ideal baking conditions. Very ideal ice cream and swimming conditions. Suffice it to say, I didn�t have a whole lot of experience with summer fruit pies. Until a few years ago, I could probably count on one hand the number of times I�d eaten peach pie. But now I think there�s nothing better.

This pie, my go-to, is basically the stone fruit pie from a 2011 issue of Bon Appetit, plus Smitten Kitchen�s glorious all-butter crust. It�s a pie worth turning on the oven, even when it�s 90 degrees in Seattle. Even if you don�t have AC.

It�s also a little tribute to my dad, who�s been gone one year this month. I thought of him the whole time I was making this pie. I think about him with each beautiful sunset, every weird joke, every time I hear wind chimes or the Rolling Stones, with every old Subaru wagon I see, every time I turn off a light to save a salmon, and all the times lately that I've caught myself walking his walk. I think of him, and miss him, every single day.

Stone Fruit Pie with All Butter Crust
Adapted from this recipe and this recipe

Crust
1 recipe all-butter crust from Smitten Kitchen (her instructions are impeccable and so easy to follow)

Filling
4 pounds stone fruits (I used 2 giant peaches, 4 nectarines, and 4 plums)
1/3 cup sugar
3 tablespoons cornstarch
Pinch fresh grated nutmeg
Zest of 1 lemon
1 egg, beaten
1 tablespoon turbinado sugar

Crust
Follow the recipe for double pie crust (2 rounds). Once dough is fully chilled, roll out both disks to about 14 inch rounds, and continue to chill until ready to use. 

Filling
Slice fruits and remove pits, peel the peach slices. Add fruit slices and 1/3 cup sugar to a large bowl, and toss to coat. Let sit for 30-60 minutes. 
Preheat oven to 400 degrees. 
Strain juice off of fruit, saving about 1/4 cup of the juice in a separate bowl. Add cornstarch, nutmeg, and lemon zest to juice and whisk well to combine. Stir back into fruit. 
Transfer one pie dough disk to pie dish, picking up the edges and letting it slump into the dish. Trim so about 1 inch of dough hangs over the edge. Fill with fruit. 
Cut remaining dough disk into strips to make a lattice crust. I went with a wide lattice on this one, but a thin lattice is super pretty and fun too.
Brush lattice topping and edges with beaten egg, and sprinkle turbinado sugar on top. Transfer pie dish to a parchment lined baking sheet.
Bake for 40 minutes at 400 degrees, then turn heat down to 350, and bake another 30-40 minutes, until dough is golden and juices are bubbly. Cool dish on a wire rack.

Peach + Cilantro Sodas

Hey friends! Sorry for being MIA! I've been so busy! I had Ragnar*, then went backpacking, then flew to Sonoma for my bachelorette party(!), then got sick, then blah blah blah yadda yadda etcetera etcetera PEACH + CILANTRO SODA! 

Peach + Cilantro Sodas // Loves Food, Loves to EatLast weekend we saw Book of Mormon, the musical (so good), then went to dinner at Terra Plata afterward, where I had an amazing house-made peach cilantro soda (plus a million other delicious things).
I've been dreaming about that soda since Saturday you guys. Fizzy, peachy, and not-too-sweet with juuuuust a hint of cilantro in the background. Such a small hint that you can tell something herbaceous is goin on, but you might not even guess right away what it is. Unless you're one of those crazy cilantro-tastes-like-soap people, then maybe you'll figure it out immediately. But really, if you are one of those people, you probably don't want to drink a peach + cilantro soda anyway. 

Peach + Cilantro Sodas // Loves Food, Loves to EatIf you aren't one of those cilantro-tastes-like-soap people, then you should probably definitely make this. It's easy and summery, and I won't even try to stop you from adding bourbon. Or rum. Or gin. Or even vodka, if that's your thing.

Peach + Cilantro Soda
Makes about 4 large glasses

5 ripe peaches, rinsed and halved, pits removed
1/3 cup cilantro (not chopped-- a small handful)
Juice from 1 lemon
1.5 tablespoons agave 
Soda water
Ice

Add peaches, cilantro, lemon, and agave to blender, and blend until smooth. In a Vitamix it gets super smooth, but if you have tiny chunks thats ok! Taste, and add a bit more sweetener or lemon if you desire - it will be diluted from the soda water, so keep that in mind. Fill your glass just over 1/3rd full with peach mix, the next third with ice, and top off with soda water. Stir and serve! Note: It may start to separate a bit, just give it another stir. 

Store extra peach mix in fridge.

Ok so, it's in the 80s in Seattle� I know, it's crazy and wonderful. I also know that the last thing anyone in Seattle wants to do on an 80 degree day is turn on the oven. A lot of our apartments and houses don't have AC, so it can be pretty miserable indoors on beautiful Seattle days. And, I mean, who wants to be inside when it's so amazing outside?

That being said, if you happen to find yourself in an AC equipped home, or you don't live in Seattle, or you just love amazing tropical tasting desserts�then you should make this crisp.

Peaches and pineapple together is such a winning combo. It reminds me of a tropical drink. And then if you top that with a buttery crumbling oat topping that has gingersnaps and coconut in it� c'mon guys. Turn on the AC. Blast the fan. Do what you need to do. Just make this dessert happen.

Peach Pineapple Crisp with Coconut & Ginger Crumble 

I wanted to keep this really light and fresh tasting, so I didn't add a thickening agent to the fruit. It comes out a little runny and less set up this way, but I happen to think that it works. If you do want a firmer filling, add a tablespoon of cornstarch to the fruit and sugar mixture. 

2.5 cups cubed fresh pineapple (about half a large pineapple)
3 large peaches, cubed (no need to peel)
1/4 cup sugar
1 teaspoon vanilla
1.5 cups old-fashioned oats
1/2 cup flour
1/2 cup brown sugar
1/2 teaspoon salt
6 tablespoons melted butter (1 stick)
10 gingersnap cookies, crumbled
1/2 cup desiccated coconut 
1 tablespoon turbinado (course) sugar

Preheat oven to 425, with rack in middle. Stir together pineapple through vanilla. Place in a buttered 2.5-quart baking dish (or two 1-quart dishes). 

Stir together oats, flour, brown sugar ,and salt. Blend in butter with your fingers until mixture is thoroughly moistened. Stir in gingersnaps and coconut. Press over fruit and sprinkle with turbinado sugar. 

Bake until juices are bubbling and topping is golden brown, about 25 minutes. 

Cool slightly, and serve with ice cream.
