Crispy Cracker Coconut Mounds

Loves Food, Loves to Eat // Crispy Cracker Coconut MoundsAlternate title: Dipping Things in Chocolate is Hard.

I recently learned that the reason a lot of people dont like coconut (according to two people I know who dont like coconut) is the texture. I dont really get it. Do these people just not like sweetened shredded coconut? What about desiccated? What about fresh? Or big dry flakes? I feel like there are way too many coconut types and applications to just give it a blanket dislike. Im the kind of person who loves coconut, both in flavor and texture. I truly think it makes everything better. I was the kid who wished for Almond Joys at Halloween, who requested chocolate cake with coconut pecan frosting for every birthday, and who poked a hole in the bottom of every chocolate in the box, until I found the coconut one. Im that person.
Loves Food, Loves to Eat // Crispy Cracker Coconut Mounds
These little treats taste a lot like an Almond Joygooey sticky sweet coconut filling, crunchy almonds, and a chocolate shell. But then theres the added salty, buttery crunch of the Ritz cracker, just for fun. I was originally planning on making little shortbread egg-shaped cookies, then doing the topping and the chocolate coating, but got lazy. Hence the Ritz. Im pretty ok with it though, these fun treats are tasty and come together in a snap, and I actually really like the flavor of the Ritz here. The hardest part is the chocolate. Why is it so hard to get a nice, even, smooth shell? In my mind, these were the perfect little mounds, with perfectly smooth chocolate. What are your chocolate-dipping secrets? Tips? Tricks?

Loves Food, Loves to Eat // Crispy Cracker Coconut MoundsOh well, I suppose Ill never be a professional chocolate dipper. Sigh.

Loves Food, Loves to Eat // Crispy Cracker Coconut MoundsIm calling these Coconut Mounds, because thats what they are and I couldnt think of a more appropriate name, but its kind of silly, because as we all know, Almond Joys have nuts, and Mounds dont. But these do. Its a confusing world we live in.

Loves Food, Loves to Eat // Crispy Cracker Coconut Mounds
Crispy Cracker Coconut Mounds
Makes approx 15.
Note: I also made a batch using almond-based non-dairy cream cheese, which were excellent, but did need a bit of flour to thicken up the mixture enough to scoop.

4 oz cream cheese (half a brick)
1 cup confectioners / powdered sugar
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
1/2 cup chopped almonds (I use roasted salted)
Ritz-type crackers
3/4 cup semisweet chocolate chips + a tiny bit of coconut oil

Mix together cream cheese and powdered sugar (with stand or hand mixer) until combined and creamy. Add vanilla, and mix. Stir in coconut and nuts. If mixture seems super soft and too loose, you can either add a tad of flour and stir to combine, or pop in the freezer or fridge for a few minutes.

Scoop mixture onto Ritz crackers (I used a 1.5 tablespoon scoop, not filled all the way) in mounds

Melt chocolate in microwave, with just a bit (1.5 teaspoon -ish) of coconut oil, just to thin it

Dip mounds in chocolate, being careful to not dislodge mound from cracker

Chill to harden chocolate, can be stored in fridge

Kerala Coconut Curried Mussels and Sweet Potato Fries on CBC's Weekend Morning Show!

This morning on CBC's Weekend Morning Show with interim host Nadia Kidwai, I presented the following dishes.  Mussels are incredibly simple to prepare, are raised organically and sustainably, higher in Omega fatty acids than Salmon, and make a fun meal with friends.

Kerala Coconut Curried Mussels and Sweet Potato Fries

2 lbs PEI Mussels (available at Gimli Fish)
1/4 oil
1 onion, chopped and smashed (traditionally done on a large stone but I mixed them in a blender)
20 curry leaves (Available at Dinos Grocery Mart, Luckys Dong Thai, etc.)
6 green chillies, slit, or favourite chilli
10 small cloves of garlic, smashed or in blender with onions
1 tsp chile powder (aka,cayenne)
3 tbs. corriander powder
1/2 tbs. turmeric powder
1/2 tsp. pepper powder
2 tbs. garam masala

1 1/2 cups coconut milk (easy and inexpensive method to making coconut milk; 1-2 cups UNSWEETENED dry coconut and 1-2 cups very hot water.  Liquefy in blender for about 2 minutes, strain into a bowl and that is your coconut cream.  Repeat with less very hot water and that is your coconut milk, combine for this recipe)

1/2 tsp salt to or to taste

Method:
In a large pot with a lid heat the oil and add the onions, smashed garlic and green chili. After some time add the smashed ginger until they are soft. Chili can be added as per how spicy you like it. When cooked through, add the  coconut milk and cook through.  Then add the mussels, stir,  and cook 3-5 minutes, or until all have opened.  Serve immediately with Sweet potato fries or potato fries.

Enjoy!

Monkey Lala Popsicles

Monkey Lala Popsicles | Loves Food, Loves to EatIT'S POPSICLE WEEK! That one week every year when Billy rounds up all of his closest, most elite food blogger friends (just kidding, everyone's invited) and we all post a kajillion recipes for popsicles and then we all eat popsicles and then you make popsicles and then you eat popsicles. It's total magic. Also, Billy is total magic. This year, to kick off #popsicleweek, he made an animated gif of Xtina eating a popsicle and asked us if we were team dirrty Xtina or team clean Christina. I said dirty.... so then I figured I better come up with a dirty pop.

Monkey Lala Popsicles | Loves Food, Loves to EatLike...Monkey Lala Popsicles!!!!

A few years ago, I went to Honduras with Evan, Amanda, and our friend Mat. We stayed on Roatan and Utila, two paradise islands in the caribbean. We snorkeled, swam, ate nothing but baleadas, and  on Roatan, drank nothing but Monkey Lalas. Every single bar in Roatan had their own Monkey Lala recipe, but the general idea is a cold, blended drink with vanilla ice cream, coconut cream, Kahlua, Baileys, Vodka and/or rum, and a swirl of chocolate sauce. It's basically dessert, and when you're sitting in the sun looking out over the bright blue caribbean, there's nothing better.
Monkey Lala Popsicles | Loves Food, Loves to Eat
These popsicles are soooo creamy and coconutty. Instead of vanilla ice cream, we're using coconut milk with a little bit of vanilla. Plus coco lopez coconut cream, Kahlua, and Baileys. They're as fierce as Xtina in Lady Marmalade. But not quite as dirrty as black haired Xtina, because I was afraid adding rum and vodka would mess with the overall freezablility. But Maybe they're Xtina with platinum hair and black tips, because we have a little magic shell style chocolate swirl all up in there.

Visit the official #popsicleweek page for tons of popsicle recipes. Billy will be updating it every day this week with more fun and cool treats. And check out the official Popsicle Week Pinterest board by Munchies. PS. Remember last year when I made these coconut lemon bar pops? And the year before when I made these creamy coffee pops?

Monkey Lala Popsicles
Makes 8-10 popsicles

1 can full-fat coconut milk
3/4 cup coconut cream (like coco lopez)
2 tablespoons Kahlua (coffee liqueur)
1 tablespoon Baileys (Irish cream)
1 teaspoon vanilla

1/4 cup chocolate chips
1 teaspoon coconut oil

Whisk together coconut milk, coconut cream, Kahlua, Baileys.

Combine chocolate and coconut oil in a small microwave bowl. Microwave for 20-30 seconds at at time and stir until melted.

Fill popsicle molds about 1/4 of the way full, drizzle in a little bit of melted chocolate, fill to about 3/4 full, drizzle in the rest of the chocolate, and fill with remaining coconut mixture. Freeze until solid.

Coconut Macadamia Biscotti | Great Food Blogger Cookie Swap 2014

Its cookie swap time! This is my 3rd year participating in the Great Food Blogger Cookie Swap. The first year I made my mas recipe for the most amazing maple waffle cookies, and last year I made insanely good peppermint mocha icebox cookies. And this year?

Coconut Macadamia Biscotti, Great Food Blogger Cookie Swap 2014 | Loves Food, Loves to Eat #fbcookieswapThis has been a really tough year for me, with lots of tears and heartache. I almost wasnt able to participate in the swap this year due to my recent posting hiatus, but luckily the head gals in charge have super big, warm, fuzzy hearts! Participating in this event seriously gave me the motivation I needed to get in the holiday spirit and start recipe planning and blogging again! So, I wanted my cookie to be all about the big, warm, fuzzy, heart-shaped part of my life, which is

Coconut Macadamia Biscotti, Great Food Blogger Cookie Swap 2014 | Loves Food, Loves to Eat #fbcookieswap#PIROMAR! (PS. this is a combo of Evan and my last names its clearly right up there with Brangelina, Beniffer and the like, but not with Kimye, because seriously NO ONE CARES ABOUT KIMYE). We got married in October and then went on our #piromoon to Kauai! So, these cookies (which are actually biscotti) are inspired by our honeymoon full of coconut and macadamia nuts, just like Kauai. Not full of sand or roosters though we left those on the island.

Coconut Macadamia Biscotti, Great Food Blogger Cookie Swap 2014 | Loves Food, Loves to Eat #fbcookieswapI made several batches of these before I got it right. I wanted the coconut flavor to come through nice and strong, and in the end it meant using every kind of coconut imaginable. Desiccated, shredded, flaked, and coconut extract! Then I threw in some mac-nuts for crunch, and topped the whole thing with a drizzle of dark chocolate! These crunchy little goodies are made to be eaten alongside a cup of hot coffee, especially if you came back from Kauai with roughly $200 worth of beans. Yoiks!

Coconut Macadamia Biscotti, Great Food Blogger Cookie Swap 2014 | Loves Food, Loves to Eat #fbcookieswap
PS. Want to see some of the pics from #piromoon!? (Not those kind of pics pervs!) I have a Kauai post in the works, stay tuned!

Coconut Macadamia Biscotti with Chocolate Drizzle
Makes about 36-40 biscotti (a bit smaller than standard sized)

 cup coconut oil
 cup granulated sugar
3 eggs
2 tablespoons coconut extract
1 teaspoon vanilla extract
1 teaspoon spiced rum
 teaspoon salt
pinch nutmeg
3 cups flour
1 tablespoon baking powder
1 cup desiccated coconut
1 cup sweetened shredded coconut, toasted and cooled to room temp
 cup large flake coconut
cup roughly chopped salted macadamia nuts
1 cup dark chocolate chips/ chunks

Preheat oven to 375. Line a baking sheet with parchment paper

With electric or stand mixer, mix together coconut oil through nutmeg until well combined. Add flour though macadamia nuts, and mix until a solid dough-ball forms.

Separate dough into 3 equal sized balls, and roll each one into a log, about the length of your sheet pan. Arrange each long on pan so theres plenty of space between, and flatten to about inch thickness.

Bake for ~25 minutes, until golden brown. Let cool until you can handle them, then carefully slice each log into strips (about 12 pieces per log).

Lay pieces cut side down/up on baking sheet, and bake for 6 minutes on each side. Cool on wire rack.

Once cool, melt chocolate (over double boiler or in microwave) and drizzle over biscotti.

Wait, there's more!

Shaved Ice Coconut Pineapple Sundae

We booked our honeymoon! Guess where we're going? I'll give you a few hints.
Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

It's a tropical paradise full of palm trees, coconuts, pineapples, shaved ice, ukelele music, waterfalls, beaches, coconuts, pineapples, and shaved ice. Did I mention coconuts, pineapples, and shaved ice?

Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

Hawaii! Did you guess right? We're going to the island of Kauai, and I am stoooooookkkked. We went to Maui a hundred years ago (in 2008 ack!) and loved it a ton. For honeymoonin, we considered knocking out a bucket list destination like Vietnam or France, but in the end, we decided on good ol' Hawaii, for a few reasons. First off, for us west-coasters, that tropical palm-treed paradise is just a hop and skip away. A quick little flight. Which means less time in a plane/train/taxi-cab, and more time on a beach/hammock/surf board.

Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

Second, we aren't even tryiiin to get travel stress on our h-moon. Don't get me wrong, we love traveling to new, foreign places. But, you have to admit, there's always at least one currency/customs/language/map-reading stressor that comes up in a new country. And normally, I'm all about navigating those waters, but after 10 months of wedding planning, the last thing I want to do is run out of lempira and not have an ATM or credit card machine in site (like happened in Honduras), or get lost in the middle of the night in the pouring rain in Brugge because oh-my-god-i-thought-that-was-the-castle-by-our-hotel, but-every-mother-effing-corner-has-an-identical-castle. You know. Nothing major, but things I don't want to think about on my honeymoon.

Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

You know what I want to do on my honeymoon? Oh, and Evan's honeymoon? (Aside from that, perverts). I want to relax. I want to be holding a drink in my hand non-stop. I want to lay on the beach, with my husband (!) by my side. I want the option of doing absolutely nothing all day and not feeling guilty about. But. BUT! If we do want to adventure, Kauai is full of hikes and waterfalls and places where Elvis filmed movies. I think we're gonna have a really swell time. I think we're also going to consume a LOT of shaved ice.

Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

Which brings me to this dessert! I was inspired by a few recipes for this, and by Hawaii! Christina from Dessert for Two posted this coconut snow the other day, and I just couldn't get it outta my head. It's basically just semi-frozen coconut milk, granita style. She served hers with chocolate sauce, which looks so rich and good, but with Hawaii thoughts swirling in my mind, I wanted something tropical! Another recipe that been's in and out of my dreams is this roasted pineapple popsicle. So naturally, I decided to combine the coconut granita magic with roasted pineapple. And not just any roasted pineapple roasted pineapple sauce! And then, since the coconut snow and roasted pineapple sauce was sort of reminiscent of classic ice cream sundaes (remember that pineapple sauce!?) I threw some cherries on top. And some black sesame seeds, for good measure.

Shaved Ice Coconut Pineapple Sundae // Loves Food, Loves to Eat

Coconut shaved ice! Roasted pineapple sauce! Go ahead, you can pretend you're on my honeymoon. Oh wait, is that creepy?

Coconut Shaved Ice Sundae with Roasted Pineapple Sauce
Makes 2 sundaes

This is a simple recipe, but you do need to scrape the coconut snow every half hour for 2-2.5 hours, so keep that in mind. You may have extra pineapple sauce, but it's delicious on ice cream, yogurt, oatmeal, with a spoon, in a box with a fox, you name it.

1 can coconut milk (full fat)
Juice from 1 lime
1/4 cup honey
1/4 cup water
1 pineapple
3 tablespoons brown sugar
Pinch sea salt
Cherries, pitted
Black sesame seeds

First, get your coconut snow in the freezer:

In a bowl, whisk together coconut milk, lime juice, honey, and water until smooth and combined. Pour into a shallow, freezer-proof dish (I used an 8 inch cake pan), and pop into freezer. After 30 minutes, scrape it all over with a fork to stop from freezing solid. Repeat this every 30 minutes for around 2-2.5 hours.

While coconut snow is in the freezer, make pineapple sauce:

Preheat oven to 400 degrees. Peel one whole pineapple, and cut into bite-sized chunks (feel free to save out a few wedges for the sundaes). Add to a baking dish (smaller, not a full baking sheet, it's ok if the pieces overlap), and top with brown sugar and a pinch or two of sea salt. Bake for 35-40 minutes. Pineapple should be super soft, and there should be a bit of liquid in the pan. Let come to room temperature, then add pineapple and any extra liquid in pan to a blender, and blend until smooth. If it's too thick, you can add a splash of water.

Assemble the sundae:

In a glass or bowl, fill halfway with coconut snow, add a small layer of pineapple sauce, fill the rest of the way with coconut snow, then top with more pineapple sauce, cherries, and black sesame seeds. Dig in!

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to Eat
I was really busy over the weekend with wedding stuff, and didnt have a chance to do a Fathers Day post.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatWere making our invites and DIY decorations (with the help of some friends, of course, plus floral by my lovely friend Brit), and taking care of all the businessbanquet permits, flatware rentals, parking permits for the oh, wait thats a surprise. etcall by ourselves. Im kind of a control freak, so I cant imagine not doing it all, but man this is hard work!

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatWedding, wedding, wedding. Sorry, its all I talk about and think about and do right now. If youre my sister/mom/fianc/friends: thank you for your help and for putting up with my constant wedding chatter! PS. 107 days!

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatSo anyway, I had a full Fathers day post planned, with some of my favorite things he used to make us when we were kids, but I didnt get around to it yet. I will soon though. Because my dad is amazing and hilarious and I love him so much. Everyone who meets him loves him so much.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatAnd he LOVES fresh strawberry pies. Every spring and summer, he whips up a million fresh strawberry pies. You know, the kind with a graham cracker crust, strawberry filling with maybe a layer of vanilla pudding or whipped cream.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatThis icebox cake is sort of a retro remix of the fresh strawberry pie. But the fresh strawberry pie is kinda retro too. So I mean Retro remix of a retro recipe?

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatIf you arent familiar with icebox cakes, theyre basically layered wafer cookies and whipped cream, chilled or frozenthe ultimate no bake summer dessert. The cookies soften in the whipped cream, and the whole thing kind of melds together into a cool, refreshing, super simple treat.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatI added strawbs to this, because duh, and instead of classic wafers, I used gingersnaps, because strawberries and ginger go really well together! And also, I swapped out regular whipped cream with whipped coconut cream, and tossed a whole bunch of toasted coconut on top. The final product is creamy, slightly sweet, gingery, strawberry filled perfection.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to EatStrawberry Gingersnap Icebox Cake with Whipped Coconut Cream

This recipe is a breeze to throw together, but you do need to plan ahead. The coconut milk needs to chill overnight before whipping, and then the cake itself needs to chill at least 8 hours for maximum cookie softness. If you do happen to dig in early, the cookies will be crunchy and everything will be less melded together, but it will still taste great!

2 cans full fat coconut milk
 cup powdered sugar
1 teaspoon vanilla
1 pound of fresh strawberries, sliced
About 30-40 gingersnap cookies (I used store boughtthe thinner the better)
-1/3 cup toasted coconut flakes

First, chill the coconut milk (this helps the solids separate from the liquids). Place both cans in the fridge overnight.

Flip them upside down, open, and drain the liquid into another dish (set aside for a different use). Scoop the thick cream into a chilled bowl or bowl of your stand mixer, and whip until fluffy stiff peaks begin to form. Add powdered sugar and vanilla, whip to combine/ until smooth.

Assemble: In a baking dish or pie plate (I used a standard pie plate), add a layer of cookies (not overlapping). Spread half of the whipped coconut cream on top, and top that with the sliced strawberries (these can overlap). Top with another layer of cookies, and then the remaining cream.

Cover and chill at least 8 hours. Serve cold or room temp.

Add the coconut just before serving.

Baked Coconut Buttermilk Donuts with Ginger Glaze

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to Eat
I think you should have donuts with a mom this Mother's Day. Whether it's your mom, your mom's mom, a friend's mom, a mom friend, or a new mom, and even if it's over the phone or FaceTime or Skype. The beauty of the internet is that we can be close even if we're far away. We can send pictures instantly, and even make the same donut recipe to eat together when we're miles and miles apart.

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to EatThe older I get (which, I might add, is only a few weeks away from my last twenties birthday yikes!), the more I appreciate moms. A lot of gals I know are having babies, and man, that looks really hard. And also my mom, she's so tough and brave and strong (and pretty! and fun!). Mom's really carry the load for everyone. I wish we understood that as teenagers. Hey teenagers, be nice to your moms!

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to EatSo, here's to the moms! On Mother's Day, and every day. Celebrating Mother's Day with donuts. Celebrating every day with donuts. Celebrating mothers every day. It's a big circle, you guys like a donut.

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to EatThese donuts are so pretty and perfect for a springy Mother's Day brunch. I'm obsessed with the sweet coconut cake and spicy ginger glaze combo. If you're less into major ginger heat, start slow, with just a little ground ginger, and work up to the fresh stuff.

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to EatAlso, if you're looking for a gift for mom, get her a donut pan, already!

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to EatBaked Coconut Buttermilk Donuts with Ginger Glaze
Donut base adapted from this recipe
Makes 12 donuts

Donuts
2 cups flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup sugar
1 egg, beaten
4 tablespoons butter, melted
1 cup buttermilk
1 teaspoon vanilla
3/4 cup desiccated coconut (dried, shredded, and unsweetened)

Glaze
2 cups powdered sugar
1/4 teaspoon grated fresh ginger (grated super fine and pulpy on a microplane)
1/4 teaspoon powdered ginger
2.5 tablespoons water
1/4 teaspoon vanilla
Additional desiccated coconut (about 1/2 cup)

Preheat oven to 375 F. Grease donut pan(s).

In a large bowl, whisk together flour, baking soda, salt, and nutmeg. In a separate bowl, beat together the egg and sugar. Pour buttermilk in a measuring cup, and stir in melted butter and vanilla. Add half the buttermilk mixture to the flour mixture, stir, then add half the egg/sugar mixture, stir. Repeat with remaining buttermilk and egg/sugar mixture.

Fill donut pan holes just barely to the top. I usually pipe donut batter in with a plastic bag, but this is a bit thicker, so I just spoon it in and spread it around with my finger or a spoon. Bake for 10-15 minutes (my oven took exactly 13 minutes), until donuts are just golden, spring back when touched, and a toothpick comes out clean. Cool in donut pan for a few minutes, then transfer to a wire rack. Repeat with remaining batter if you only have 1 pan.

Cool completely on a wire rack before glazing.

To make glaze: In a large bowl, whisk together both gingers, water, and vanilla. Add powdered sugar, and whisk until combined and smooth.

Put coconut in a separate dish or plate.

Dip cool donuts (smooth side down) in glaze, then immediately into coconut. Let sit until glaze hardens, about 15 minutes.

Carrot Cake Smoothies

Carrot Cake Smoothies// Loves Food, Loves to Eat
I had this recipe ready for you guys earlier this week, but decided it was probably a bad idea to post it on April Fools day. Then youd be all like Oh, its not actually a carrot cake smoothie, its cakeright? Im sorry. Its really a smoothie, no jokes here. There is no cake.

Carrot Cake Smoothies// Loves Food, Loves to EatBut, also not a joke: this smoothie is really good! And its good for you! And, if youre gonna be filling your Easter keister up with a ton of ham, potatoes, deviled eggs, Cadbury cream eggs, homemade ricotta, coconut cakes, lemon pies, and other pastel-inspired goodies (like I will), then a pre-feast smoothie might be in order.

Carrot Cake Smoothies// Loves Food, Loves to EatThis smoothie has all the makings of a good carrot cake, minus the cream cheese frosting, butter, eggs, and cake parts. Carrots, coconut, nuts, and spices get all whirled up in your blender with other good and creamy things like coconut milk, bananas, and dates. Its almost a carrot cake shake, rather than smoothie.

Carrot Cake Smoothies// Loves Food, Loves to EatIf youre feeling really festive, you can top it all off with toasted coconut and chopped nuts. And also that remaining coconut milk? Go ahead and whip that into a smooth and fluffy whipped cream. Its really like the icing on the cakeor the smoothie shake, if ya know what Im sayin.

Carrot Cake Smoothies// Loves Food, Loves to Eat
Carrot Cake Smoothies
Serves 2

5 medium-large carrots, peeled and roughly chopped
1/4 cup unsweetened shredded coconut
1/2 cup coconut milk (if you're using remaining for whipped cream, be sure to use a full fat version)
2 large dates, pitted
1/2 large banana
1/4 cup almonds or other nuts
1/2 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of fresh nutmeg and ground cloves
2 cups of ice

Toppings:
Toasted coconut
Chopped nuts

Place everything except ice and toppings in blender, and blend until smooth. Add ice, and blend until smooth. Pour into smoothie glasses or jars, and serve with toppings.
